In this interview we speak with Willie Ray Parish, the founding director of the Border Art Residency. Parish discusses the residency program that attracts artists from all over the world to work and live in La Union, NM. Recently artist Scott McMahon joined the program and he partnered with Parish to create a mobile camera obscura that will become part of the BAR's permanent collection. The public viewing will be on April 16, 2011, but the BAR is open to visitors anytime.

Adventure Cycling Across the United States

This weekend's edition of "On the Road with Lisa D." features an interview with Beth Nobles from Texas Mountain Trails in West Texas. Rebooting America's Outdoors by Michael Brune

It's a famous photo: President Theodore Roosevelt and John Muir are posed together on the overlook at Glacier Point in 1903. Roosevelt stares directly at the camera, looking like he wants to bust a bronco and play a polo match at the same time. Muir, dressed like a well-heeled hobo, gazes off toward the mountains. It was during this three-night camping trip in Yosemite that Muir persuaded Roosevelt that his beloved Yosemite should be a national park -- protected and managed by the federal government for all Americans.

Interview: Adair Margo, Founding Director of The Tom Lea Institute

Listen to an interview with Adair Margo, the founding director of the Tom Lea Institute in El Paso, Texas. Tom Lea is one of El Paso's most celebrated and prolific visual artists, with most of his works on view at the El Paso Museum of Art located at One Arts Festival Plaza in Downtown El Paso.

Margo oversees Lea's legacy and organizes a month-long festival in El Paso honoring the artists and this year, Tom Lea Month is officially taking place in October, no longer falling in the hot summer months. Adair Margo Bio

Adair Margo was the Chairman of the President’s Committee on the Arts and the Humanities during the two-term Presidency of George W. Bush. During her tenure, Margo focused on international cultural diplomacy beginning with Mexico. She traveled with First Lady Laura Bush to Paris, France for the United States reentry into UNESCO in 2003 and was appointed by Secretary of State Colin Powell to the US National Commission for UNESCO. Serving as a cultural ambassador, Margo traveled to Uruguay in 2004 at the invitation of U.S. Ambassador Martin Silverstein and she led the highest level cultural delegation to ever visit the People’s Republic of China at the invitation of Minister of Culture Sun Jiazheng in 2006. Adair Margo received the Aguila Azteca, the highest recognition given by the Mexican Government to a non-Mexican citizen, from Ambassador Arturo Sarukhan at the Mexican Cultural Institute in Washington, DC in 2007. In 2008, she received the Presidential Citizens Medal from President George W. Bush who cited her “rallying of support for the cultural agencies and strengthening of international relationships from Mexico to China”.

Review: Travel books and guides

One of my biggest demands of a travel guide is size! Smaller is better. I don't like bulky books and heavy binders when it comes to travel resources, which is why I recommend these guides for purchase. The National Geographic guide pictured here is $24 and the playing cards are $8.50.

Both guides offer plenty of information on national parks in the Southwest, which is a destination worth considering in early Spring.

This photo was taken on a trip to the Chinati Foundation where we took a windy tour of Donald Judd's amazing compound. If you've been thinking about making the trip out, do so! Food Review: Breakfast at Good Coffee

Truly one of the most disappointing places in El Paso for good coffee, Good Coffee delivers on breakfast like no other Mexican restaurant in the city. And who needs a good cup of coffee to deaden the magnificent flavors of dishes like Enchiladas Montada and Chilaquiles? (Recipes for all of these dishes are provided in the Cook it Yo'Self section at the bottom of this review just in case you're reading this after Good Coffee closes for the day and the urge to cook takes over.)

As is typical with several Mexican dishes served on the breakfast menu, Enchiladas Montada turns a traditional dinner item into an amazing breakfast item by adding two simple ingredients, eggs over easy and hash browns. Enchiladas Montada (pictured above) comes with two cheese enchiladas smothered in red chile sauce topped with an egg over easy. Simply breaking the egg yolk covers the enchiladas with a creamy yolk, adding a smooth texture to the already soft textures of melted American cheese and soft tortillas. Every spoonful can be taken to the next level with either a small bit of refried beans or hash browns, a perfect flavor combination. An incredibly heavy breakfast, I usually make my walk through half of the plate, taking the other half home to dine on as a late afternoon snack.

Another excellent breakfast dish that comes with a stronger flavor and texture kick is Chilaquiles, with red or green chile sauce. Made from scratch this dish can be incredibly time consuming but 100% worth the effort. Several corn tortillas are cut into chip-sized bites and deep-fried in oil. In a blender you can puree red or green chiles to make the sauce, which is poured over the chips after they’ve been fried, covering the chips entirely with a red or green sauce, depending on your flavor craving. Next the chips are coated with shredded American cheese, chopped scallions and topped with two eggs over easy. Depending on how much you fry the chips and how soon the chile sauce coats them, the chips can be crunchy or soft. I prefer my Chilaquiles dish to have a texture combination of hard chips, soft cheese, crunchy scallions and soft egg yolks melted over it all. Normally served with refried beans, this dish is also heavy for breakfast and usually half of my meal makes it home to my refrigerator.

If heavy Mexican dishes aren’t your thing for breakfast, the American breakfast of eggs, bacon and pancakes is another menu item worth exploring. Good Coffee’s pancakes are thick and light and fluffy, a combination of textures rarely achieved in a pancake. Served with a huge helping of butter and endless syrup, the pancakes are divine. The bacon is thick and fried to a perfect crisp, which tastes delicious alongside eggs scrambled in butter.

I’ve yet to be disappointed in the food at Good Coffee but haven’t really explored the lunch and dinner items, as I can’t seem the get past the delicious breakfast. After attempting to love the coffee, I just plain gave up and now order lemonade or iced tea with my meals.

Why the name Good Coffee for a restaurant that serves up such delicious Mexican food and such terrible coffee? Both “Great Breakfast” or “Yummy Food” would make excellent names but who really cares about the restaurant’s name when your tastes buds are dancing on the back of tongue as the flavors of red chile, melted cheese and eggs over easy make their way into to your stomach, right?

Does Good Coffee serve some of the best Mexican food for breakfast in El Paso? Absolutely. If you’re in El Paso for a short visit, this is definitely one restaurant you need to place on your culinary schedule. Breakfast dishes run $5 - $9.

Food Trucks: The Tacoholics Taco Truck is Coming to a Parking Lot Near You

Note: It is my dream to eat at a food truck in every state across America. Of course I am starting with El Paso, and with Tacoholics, the impetus for my food truck love affair. Where do you live? What are the good food trucks in your area?

Jesse Pena spent months searching for funding and a location for a restaurant he longed to open. Luckily for foodies smitten with gourmet street tacos, Pena opened his restaurant in the back of a truck when funding and the location didn’t materialize. Partnering with his wife, Pena created Tacoholics Taco Truck, a food truck serving Pena’s delectable street tacos. Pictured here are the South Texan and Korean tacos.

Recently Pena’s truck was in the parking lot of my office (lucky me) and because I was fourth in line, I took the chance to interview the other diners. Two patrons follow the Tacoholics Taco Truck on Facebook and Twitter and track the truck down weekly for lunch, and for a midnight snack when he’s parked outside of a bar at 2 a.m. The third patron couldn’t talk because he was a spy, soon opening his own gourmet burger truck and he was ordering lunch and doing some recon. (I will make sure to post information on this exciting culinary development, when it becomes available.)

Per meal, you can expect to spend $6, or $1.50 per taco, or $5.99 for the Mexican Philly. Sides are periodically on the menu; if the Boracho beans are available, try them and you will thank me for adding smokey, delicious beans to your meal. Pena has vegetarian options on the menu too, serving delicious Tofu tacos every lunch and periodically serving up nopalito tacos. Most people I know are crazy about the tofu tacos and the Mexican Philly, but I see plenty of taco plates served to diners whenever I’m at the truck.

My favorite tacos are the South Texans served with top sirloin, grilled onions and Asadero cheese. Although I tried and enjoyed the Koreans and the Mixto, the South Texans are savory and satisfying, I rarely order anything else.

Everything is made fresh, and I usually eat the meal five minutes within getting my tacos in my hands. If you can afford to eat close to the truck, do it, as the food is so much better right off the grill and although there isn’t seating, you can just park it on the curb.

Because this is a new trend in El Paso dining, especially for the lunch crowd, the Tacoholics could use some fans on Facebook, followers on Twitter and busy lunch locations. Read below for the handles and contact information and be sure to tell Pena that Lisa D. from The Stanton Mag Crew sent you.

The last time I was in Truth or Consequences, New Mexico, it was 1995 and I was driving cross country from California to New York in my Volkswagen Fox (named Iddgy) with my college roommate Jena Antonchuk (nicknamed Foosh); seeing the town again after 16 years was so surreal because so little has changed.

This photo is just a small part of a very elaborate found object fence that runs almost an entire city block around a collection of homes. The spirit of this photo perfectly embodies the vibe of the town - bits and pieces of houses and people, nestled together along the banks of the Rio Grande.

Urban Vacation: Downtown Los Angeles

According to New York Times travel writer Chris Colin (pictured above), you can spend 36 hours in Downtown Los Angeles without ever getting in your car; sacre bleu! How can this be true?! As I read through his recent travel piece "36 Hours in Downtown Los Angeles" (which enjoyed the #1 most emailed slot for several weeks), I found Colin's article hard to believe. The Downtown Los Angeles I remember visiting eight years ago was sketchy, filthy and home to a men’s shelter, which created a relatively big homeless population. There was no way I could see myself vacationing in Downtown L.A., let alone spending 36 hours in that one neighborhood.

So I called Colin and asked him if he was stretching the truth in his piece or fabricating any of the photos, to which he said “no.” As you will hear in the interview (link below), Colin was surprised by his Downtown L.A. adventure too and excited at the great eateries, hip watering holes and the lack of necessity for your vehicle. In addition to hip galleries blossoming up in Chinatown, Downtown L.A. offers walking tours of some pretty amazing architecture to include Frank Gehry’s Walt Disney Concert Hall.

Colin also points out that accommodations in Downtown L.A. aren’t crazy expensive, $189 a night is an option; food and drink included, the weekend trip won’t break your bank. Colin did a great job convincing me he was speaking the truth about Downtown L.A. and I’ve since spoken to several other trusted sources who says, “it’s true!
